Where the beef comes from

Every cut is hand-sourced from boutique ranches across the Pacific Northwest and Midwest, chosen for marbling, texture, and provenance.

28 to 60 days

Our in-house dry-aging program runs 28 to 60 days in a custom Himalayan salt-lined chamber — developing depth no commercial cut can match.

The Fire

We cook exclusively over a custom wood-fired grill using Pacific alder and applewood — delivering a crust and char that gas simply cannot replicate.

Born from obsession.

Corey Blake

I grew up watching my father tend a backyard grill with the same reverence most people reserve for fine art. That obsession never left me.

After training at the Culinary Institute of America and spending a decade in New York's Michelin-starred kitchens, I returned to the Pacific Northwest with one mission: to open a steakhouse that treated beef as the nuanced, complex ingredient it truly is.

We opened in Belltown in 2010 with 42 seats and a single wood-fired grill. Fourteen years later, the grill is still the center of everything we do.

The Beginning

2012

James Beard Nomination

Named a semifinalist for Best New Restaurant, bringing national attention to Seattle's dining scene.

2015

Dry-Age Program Launched

Installation of our Himalayan salt-lined aging chamber — the first of its kind in Seattle.

2018

Private Dining Addition

Expansion of the space adds a 30-seat private room and a dedicated sommelier program.

A5 Wagyu Program

Partnership with Miyazaki Prefecture producers brings Japan's finest beef to Seattle's table.
